The hand roll looks simple, and that's the trick. Warm, buttery brioche cradling cold, sweet lobster; a whisper of citrus; and — right at the end — a pinch of salt that pulls the whole thing into focus. Nothing hides here. Every element has to be right.

It starts with the bread. We want brioche that's toasted just enough to hold its shape but still soft enough to give way, so the first bite is warmth against the cool of the seafood. That contrast is the entire point: temperature, texture and time, all in one hand-held moment.

Then the star. Lobster, crab or octopus — each treated with restraint, because premium seafood doesn't need rescuing. A good roll is mostly about knowing when to stop: enough dressing to bind, never enough to mask. The pinch of salt at the finish isn't seasoning so much as a signature.

Order one and you'll understand the name. A pinch changes everything — and a hand roll is that idea you can hold.
